Key Responsibilities

Sales & Customer Service

  • Ensure sales growth and develop strategies to achieve monthly sales targets.
  • Maintain high customer service standards, ensuring a positive dining experience.
  • Respond proactively to customer concerns and complaints, resolving them efficiently.
  • Work closely with the District Manager to implement promotional strategies.
  • Conduct and evaluate customer surveys to improve service quality.

Store Operations & Management

  • Oversee daily operations and maintain a smooth workflow.
  • Plan and allocate tasks for the Assistant Manager and Supervisor.
  • Ensure compliance with health and safety regulations, food hygiene, and Halal standards.
  • Manage inventory levels, conduct weekly/monthly stock takes, and minimize wastage.
  • Maintain labour costs and store expenses to ensure profitability.
  • Organize and oversee outlet promotions and events.
  • Conduct team meetings and ensure proper communication across staff levels.

Employee Development & Training

  • Train, guide, and mentor team members.
  • Conduct staff performance evaluations and recommend promotions when necessary.
  • Foster a team-oriented environment, ensuring employee engagement and motivation.
  • Implement onboarding and training programs for new hires.

Quality Control & Brand Consistency

  • Ensure all products and services adhere to Gula Cakeryâs quality standards.
  • Implement and enforce Standard Operating Procedures (SOPs).
  • Monitor food preparation, service speed, and presentation for consistency.

Qualifications

Job Requirements

  • Minimum SPM or Certificate/Diploma in Hospitality, Business Administration, or a related field.
  • Outlet Manager: Minimum 3-5 years of experience in F&B operations or outlet management.
  • Assistant Outlet Manager: Minimum 2 years of experience in outlet or shift management.
  • Supervisor: Minimum 1 year of experience in a supervisory role in F&B.

Daily Operations Support

  • Assist in supervising daily front-of-house and back-of-house operations.
  • Ensure customer orders are fulfilled promptly, accurately, and efficiently.
  • Monitor food preparation and service procedures to maintain speed and quality.
  • Support in managing store opening, closing, and shift handovers.
  • Lead and oversee shifts, manage floor presence, and ensure staff are meeting performance expectations.

Team Supervision & Development

  • Assist in scheduling staff shifts and ensuring adequate manpower during operational hours.
  • Provide on-the-job coaching and guidance to team members, especially new hires.
  • Monitor team performance and discipline, and report issues to the Restaurant Manager.
  • Promote a positive and productive work culture.
  • Provide on-the-job training and support new staff onboarding alongside the Manager.
  • Recognize and reward team achievements to encourage motivation and accountability.
  • Support with the daily prep plan, stock level checks, and allocation of duties before each shift.
  • Conduct pre-shift team briefings in the absence of the Restaurant Manager, covering key topics like sales targets, customer feedback, and promotions.
  • Supervise and coach team members on brand standards and operational procedures.
  • Step in to resolve minor HR-related concerns and escalate major issues to the Restaurant Manager.

Health, Safety & Cleanliness

  • Ensure compliance with food safety, hygiene, and sanitation standards.
  • Conduct temperature and cleanliness checks across food prep and dining areas.
  • Reinforce staff adherence to SOPs, health protocols, and brand standard.
  • Monitor service speed, friendliness, order accuracy, and cleanliness throughout the shift.
  • Monitor equipment and facility cleanliness, report maintenance issues promptly.

Customer Experience

  • Lead by example in delivering excellent customer service and ensuring customer satisfaction.
  • Handle basic customer feedback and escalate major issues to the Restaurant Manager.
  • Support staff in managing crowd control during peak periods.
  • Ensure a consistent, high-quality customer experience by actively engaging on the floor (FOH).
  • Handle customer complaints and escalate when necessary, ensuring corrective actions are taken.

Marketing Activation & Local Engagement

  • Communicate important updates, promotions, and operational changes to team members.
  • Assist with basic reporting tasks, including sales summaries, customer feedback logs, and shift handover notes.
  • Use shift reporting tools (e.g., delivery performance, upselling results) to identify areas of improvement.
  • Promote upselling and support the team in meeting daily sales targets.
  • Help implement and track local promotions or national campaigns.

Stock Control/Management/Ordering

  • Monitor usage and report discrepancies or wastage to the Restaurant Manager.
  • Ensure proper storage, labelling, and traceability practices are followed.
  • Support in daily inventory checks, stock rotation, and monitoring of usage.
  • Alert the Restaurant Manager on low stock levels or discrepancies.
  • Assist in receiving deliveries and ensuring proper storage of goods.

Ad-hoc Responsibilities

  • Support any ad-hoc tasks, special assignments, or projects as requested by the superior or the company.
  • Remain flexible to support cross-company initiatives, internal events, audits, or urgent business priorities as needed.

Job Requirements

Education & Experience:

Qualifications

  • Diploma or Degree in Hospitality Management, Business Administration, Culinary Arts, or related field.
  • Food Handler Certificate and Health & Safety Certification (as per local regulation).

Experience

  • Minimum 3 years of experience in restaurant or food & beverage management, with at least 2 years in a supervisory or managerial role.
  • Prior team lead or supervisory experience is preferred.

Skills & Competencies

  • Strong knowledge of QSR systems and operational best practices.
  • Strong leadership and team management abilities.
  • Good communication and interpersonal skills.
  • Proficient in inventory control, scheduling, and basic financial management.
  • Hands-on leadership with the ability to coach and energize a young team.
  • Proficiency in POS systems, digital ordering tools, and basic Microsoft Office.

About The Job

Based at the Mandarin Oriental, Kuala Lumpur / within the Food & Beverage Department in Kuala Lumpur, the Assistant Restaurant Manager is responsible to manage the day-to-day operations of the restaurant and create a pleasant dining environment and experience for guests. The Assistant Restaurant Manager reports to the Restaurant Manager.

As Lounge Manager, you will be responsible for the following duties:

  • Plan in conjunction with the Restaurant Managers activities, promotions, menu implementations according to the annual marketing plans
  • Ensure that all designated action points from daily briefings or bi-monthly operational meetings are being followed by the individuals concerned
  • Ensure that positive working relations with non-Food & Beverage departments are fostered giving cooperation at all times
  • Be aware of and comply with all legislation affecting the operation, including licensing regulations, health regulations and fire and safety regulations
  • Assist the Restaurant Manager in compiling the annual marketing plans and budgets
  • Ensure disciplinary and grievance procedures are properly adhered to and followed
  • Handle customer comments and complaints and take swift corrective action after consultation with the Restaurant Manager and other department head concerned
  • Develop a system for fast and efficient service
  • Maintain good communication with the Kitchen operations, F&B section heads and other relative department
  • Ensure that all FLHSSE standards are followed in all front and back areas of the Restaurant/Bar and hygiene and cleanliness in the storage areas
  • Conduct training for colleague as well as implement regular training programmes
  • Uphold the standards of Food and Beverage service and FLHSS&E as outlined in the SOP, LQE and MO Pillars

As Assistant Restaurant Manager, We Expect From You

  • A University/ Hotel School or College Graduate in Hotel Management
  • Minimum 4 years of hotel experience
  • Good knowledge of customer service and guest contact skills
  • Handling guest / colleague complaints and dealing with them tactfully
  • Previous experience in supervising and/or delegation
  • Willingness to develop team members and self

Ensure staff is working together as a team to ensure optimum service and that guest needs are met. Inspect grooming and attire of staff, and rectify any deficiencies.
