Job Description
The Hygiene Manager is responsible for the maintenance/upgrade of sanitation and hygiene standards to ensure all food served to guests and employees are free of microbiological, chemical and physical contamination and all work areas conform to required Hygiene and Sanitation levels.

  • Propose and maintain minimum standards in all work areas, stores, receiving and disposal areas to adhere at all times to required hygiene standards.
  • Responsible for effective and efficient maintenance of records related to the Hotel's sanitation and hygiene efforts/program.
  • Formulates and maintains an up-to-date methodology manual that is constantly available for use and review by the section personnel.
  • Responsible for promoting effective dissemination coordination with the rest of the staff in the Hotel.
  • Responsible for the office/section area being clean and orderly with an organized and efficient workflow.
  • Performs special assignments and projects assigned to the office by the superiors.
  • Conduct and chair the FSMS Monthly Meeting.
  • Monitors, assists and performs all procedures and protocols for maintaining an excellent sanitation and hygienic environment.
  • Is part of the Hotel's Sanitation Team, which conducts monthly sanitation inspections throughout all food handling areas and generates respective reports.
  • Continually liaises with external agencies (laboratory, government bureau, health practitioners, etc.) on sanitary matters.

Qualifications
To successfully fulfill this role, you should maintain the attitude, behaviours, skills, and values that follow:

  • Minimum two to three years’ work experience as Hygiene officers in a hotel or similar large restaurant complex; preferable prerequisite is experience in the Hotel industry.
  • Responsible self-starter, capable of handling multi-faceted projects and of working under pressure.
  • Good communication and guest relations skills, a proactive problem solver.
  • Creative with international culinary focus and flair. Attention to detail.
  • Team player, who values teamwork, has good team building skills and is able to communicate effectively with all levels of team members.

  • Bachelor of Food Science or Certified as a Food Handler trainer.
  • HACCP (Hazard Analysis and Critical Control Point).
  • Train the Trainers - Facilitator.

**Managing Hygience and Food Safety Operations**
- Verifies compliance with Brand Standard Audit (BSA) requriements of Marriott International throughout the operations.
- Advises and monitors food handlers on the proper good handling practices and verifies their observance.
- Identifies key areas of risk in various food operations and takes preemptive remedial action.
- Verifies complianace with food and hygiene regulations, licensing conditions and codes of practice relating to food operations.
- Provides technical advice on product labeling issues for fulfilling government requirements.
- Provides in-house food hygiene training for all good handlers, (e.g. new hires and trainees).
- Handles complaints or enquiries from customers and local food sategey and health departments on food hygiene matters.
- Conducts and records daily kitchen inspections on the personal, environmental and food hygiene condictions and provides corrective action plans as necessary.
- Conducts regular vendor inspections in partnership with purchasing and culinary leadership.
- Conducts regular internal BSA inspections with culinary leadership and kitchen cleaning staff.
- Conducts regular inspections on the kitchen of kitchen equipment and verifies defects and non-conformities are remedied by the appropriate parties.
- Coordinates cleaning program in all F&B areas (e.g., General clean), identifying trends and making recommendation for improvements.
- Establishes and maintains open, collaborative relationships with employees.
- Liases with pest control company for any pest issues and monitors pest control performance.
- Maintains and makes improvements to hygiene standards.
- Regularly reviews and refreshes the food safety standards of all food handlers withing the property.
- Maintains documentation on all hygiene and food safety stadards throughout the operation.

  • Possess a basic degree in Science, HSE from a recognized university.
  • Must hold valid & certified Industrial Hygienist.
  • Min. 5 years’ working experience in the IH field with at least 2 years’ working experience in the Oil & Gas or petrochemical industry specifically.
  • A certified competent person in selected disciplines in IH such as Noise, Radiation Person Officer (RPO), Chemical Health Risk Assessor etc. will be an added advantage.
  • Knowledge with OH matter is an advantage.
  • Must be prepared to travel offshore.
  • Articulate with an excellent command of English.

Occupational Health Doctor (OHD)

  • Should have a basic medical degree registered with the Malaysian Medical Council and a post-graduate certificate or Diploma or Masters or PhD in OH that is recognized by DOSH.
  • Have successfully completed the OHD Training Course and passed OHD examination by NIOSH.

Occupational Health Nurse (OHN)

  • Must have a basic nursing or medical assistant certificate, diploma or degree registered with the Ministry of Health.
  • Must have a valid Annual Practicing Certificate (APC) from the respective body such as Nursing Board or Medical Assistant Board.
  • Must complete a post-basic certificate, diploma or degree in Occupational Health.
  • Must be prepared to travel offshore.
  • Articulate with an excellent command of English.
