The Hygiene Manager is responsible for the maintenance/upgrade of sanitation and hygiene standards to ensure all food served to guests and employees is free of microbiological, chemical and physical contamination and all work areas conform to required Hygiene and Sanitation levels.
Responsibilities- Propose and maintain minimum standards in all work areas, stores, receiving and disposal areas to adhere at all times to required hygiene standards
- Responsible for effective and efficient maintenance of records related to the Hotel's sanitation and hygiene efforts/program
- Formulates and maintains an up-to-date methodology manual that is constantly available for use and review by the section personnel
- Responsible for promoting effective dissemination coordination with the rest of the staff in the Hotel
- Responsible for the office/section area being clean and orderly with an organized and efficient workflow
- Performs special assignments and projects assigned to the office by the superiors
- Conduct and chair the FSMS Monthly Meeting
- Monitors, assists and performs all procedures and protocols for maintaining an excellent sanitation and hygienic environment
- Is part of the Hotel's Sanitation Team, which conducts monthly sanitation inspections throughout all food handling areas and generate respective reports
- Continually liaises with external agencies (laboratory, government bureau, health practitioners, etc.) on sanitary matters.

- Minimum two to three years’ work experience as Hygiene officers in a hotel or similar large restaurant complex; preferably with experience in the Hotel industry

Responsibilities:
Meetings
- Host weekly HACCP team meeting (bi-weekly tba).
- One on one meeting with Executive Chef on daily based.
Hygiene Check Walks
- Daily walks to all HACCP related areas.
- Daily hygiene report with approval by Exec Chef or Exec Sous Chef.
Personal Hygiene
- Hand wash basins are available near each work area.
- Gloves must be wearing in cold kitchen / pastry / butchery and areas where raw food items are handled.

- Items to be removed from delivery packaging and transferred in washable containers.
- Sufficient and well-maintained refrigeration equipment functioning at correct temperatures.
Preparation & Storage
- To ensure rapid chilling after cooking.
- To ensure appropriate holding for at hot temperatures until serving.

Training

Service and Display
- Hot foods must have kept above 63°C for a maximum of two hours.
- Chilled foods must have kept below 8°C for a maximum of four hours.
Packaging of Takeaway Food Items
- Food is transported in packaging or containers that protect it from contamination.
- Chilled foods are kept at the right temperature.
Criteria
- Good knowledge on HACCP (Hazard Analysis and Critical Control Point) and ISO Food Safety Management System).
- Preferably two years work experience as Hygiene Officer / Executive in a hotel or similar function in large restaurants, preferable prerequisite is experience in the Hotel industry.
- Certified Halal Executive qualification is required.

The Hygiene Executive assists to supervise and manage the HFSMS (Hilton Food Safety Management System) for the entire F&B and Kitchen. - Emphasize on the importance of our FIFO (First in, first out) and date labelling systems.
- Maintain a good working relationship with other departments and employees to ensure full co-operation and commitment from all.
- Perform other duties related to operations in order to maintain the food safety management system of the hotel.
- Carry out any other reasonable duties and responsibilities as assigned.

Administration
- Maintains the Hygiene Inspection Log Book.
- Submits all guest/ employee food and hygiene-related incident reports in a timely manner.

Customer Service
- Provide a courteous and professional service at all times.

- Works closely with the local Hygiene and Health authorities/ agencies and coordinates with all related matters that involve the Hotel and the authorities.
- Provide advice to the Management to ensure environmental hygiene.
- Coordinates and ensures the implementation of the Pest Control programme in the Hotel.
- Works closely with Human Resources to ensure all employees attend the medical check and obtain the necessary Health Card as required by the local authority.
- Takes all necessary actions to ensure the Hotel passes the Hygiene inspection and successfully obtains the necessary Hygiene License for the Hotel.
- To have a complete understanding and strictly adheres to the Hotel Policies & Procedures related to Fire, Hygiene, Health and Safety.

- Works closely with Materials and receiving in the Food receiving area, and communicates with suppliers about the way they deliver the product to the accordance with all hygiene standards (Any areas of concern about suppliers should be reported to the Chef De Cuisine)
- Together with the Chef De Cuisine, lead and be part of the Hygiene committee.
Personnel
- Through hands-on management, closely supervises the Kitchen employees in the performance of their duties and ensures this is in accordance with policies & procedures and applicable laws.
- Ensures effective training programmes for employees in coordination with the Departmental Trainers so all employees understand all Hygiene regulations.
Other Duties
- Attends chef's briefing and updates the team on random hygiene test results and best hygiene
practices.
- Understands and strictly adheres to Rules and Regulations established in the Associate Guide and the Hotel's policies concerning fire, hygiene, health and safety.
- Ensures high standards of personal presentation and grooming.
- Attends training sessions and meetings as and when required.
- Carries out any other reasonable duties and responsibilities as assigned.
